How does a seed "know" if its under dense canopy shade or in a canopy gap?
I'm guessing conditions around the seed help it determine the appropriate place and time to grow... e.g. Temperature, Water, Red Light? Am I leaning toward the RIGHT path?
Those are called tropisms. For example, phototropism allows a plant to bend towards the light. If the light is the sun it is called heliotropism. First noticed by Charles Darwin in 1880. A brief quote from msn encarta (4th source):
"The turning is due to the action of the plant hormone auxin, which causes elongation. On the side of a plant facing the light the auxin is inactivated, and only the side away from the light elongates; hence the plant tends to bend toward the light."
The initial detection of light versus darkness is from light photoreceptors called phototropins.
what evergreen trees are suitable for planting in a pot to provide a canopy of shade?
southern california region.
It would depend on your climate...Each area of the US is divided into zones by the USDA. For example, zone 10 is the southern most tip of Florida and areas of California, which rarely or never have a freeze. Zone 10 is considered tropical. The belt that sweeps through the lower to middle portions of South Carolina, Georgia, and Alabama is primarily zone 8 In zone 8, temperatures can get down to freezing. If you live in a frost free area or one in which temperatures rarely dip below freezing, you might consider a large evergreen shrub limbed up to a small tree. Plants that are good candidates for this include: Southern Wax Myrtle, Loquat, Loropetalum, and Tea Olive. You will need a rather large container though to support the root mass and water needs as these get larger.

What small tree that has a large canopy would be suitable for a small garden for shade?
Many flowering fruit trees stay relatively short, but have nice canopies and lovely spring flowers.
A large shrub grafted to a smaller trunk will also offer the effect you are looking for.
I like flowering almonds, weigela, and spireas for this method. All are hardy and offer beautiful flowers.

Bird Friendly: Good for coffee, environment
“Going green” was a phrase heard often last year, in business and at home, and it is sure to be even more prevalent in both conversation and practice this year. The specialty coffee industry has been at the forefront of global environmental and social issues for many years. It is now generally understood that what is good for the environment is probably good for humans, as well.
There are a number of certifications and labels in use in the coffee industry that address such concerns, labels such as Certified Organic, Rainforest Alliance and Fair Trade. The basic idea behind these labels and certifications is that by ensuring socially and environmentally friendly practices in the |production of coffee, not only do the farmers and their lands benefit (and by extension the rest of the planet as well) but so do consumers, who then have access to the higher quality product that such certifications promote.
In my opinion, perhaps the most impactful of the coffee certifications is Bird Friendly. It’s a certification program of the Smithsonian Migratory Bird Center, a proactive, interdisciplinary organization whose concern is promoting awareness and protection of migratory bird species wherever they may be in the western hemisphere. These folks get their hands dirty using science, politics and social forces to try to make sure that bird species and habitats from North America to South America are protected and enhanced.
